Tinga of Chicken (tinga de pollo)

Here is another tasty and easy recipe to prepare – “chicken tinga”.Tinga is a Mexican dish made with shredded chicken in a sauce made of tomato, chipotle, chili and onion strips.


(to cook chicken)
1kg chicken breast
1 clove of garlic
2 onions
Salt to taste

(to make tinga)
4 Onions cut in very thin halves
3 cloves of garlic finely chopped
1 bottle or can of chipotle chillies
1 bottle of tomato paste
2 cups of chicken stock



Cook the chicken in water, adding the onion and garlic and season with salt.

Once cooked leave it to get cool and then shred it. Do not throw the chicken broth.

Meanwhile, cut the onion into thin half-moons and the garlic as well in very small pieces.

Put to fry the onion and garlic over low heat.

Add the chicken allowing it to fry slightly while stirring with the onion.

Separately blend 2 or 3 chipotle chilies with a cup of broth and the tomato paste.

While the chicken is frying add the blended paste to incorporate to the chicken, if it gets to dry, then you can add more chicken broth.

Boil slightly.

If you want a very spicy pasta, then you can add 5 or 6 grinded chipotle peppers.

The dish is served hot with refried beans for the garish and with tortillas.
